The Famous Art Smith Cheddar Cheese Drop Biscuit

Akhirnya!

Bisa juga nyobain The Famous Art Smith Cheese Drop Biscuit. Waktu itu pernah liat di Oprah Show yang menghadirkan Art Smith, chef pribadi Oprah yang juga pemilik restoran Table 52 di Chicago. Dan langsung penasaran kayak apa rasanya. Nampaknya enak bangeeet...

Resep aslinya pake Goat Cheese. Tapi pas kemaren ngubek-ngubek YouTube, ada juga ternyata yang menggantinya dengan Cheddar Cheese. Yaitu Chef Scott Herbert (Secret Ingredients) from Whole Foods Market. Yippiee!

Sebenernya agak aneh kalo hidangan ini diberi nama "biscuit". Karena teksturnya sendiri tidak sepenuhnya crunchy. Menurut gue ini lebih seperti Scones atau Biscotti.

Anyway.. Karena baru pertama kali nyobain, gue bener-bener ikutin resepnya dengan detail. Hanya satu yang nggak.. Yaitu penggunaan Iron Cast sebagai loyang. Kalaupun gue ganti dengan pan teflon, gak muat bow ke otang gue. Akhirnya diakali dengan loyang muffin mini. Manteeeeb... Gue sih doyan, tapi kayaknya lebih enak lagi kalo ditambahin cincangan smoked beef atau pepperoni biar gak terlalu plain.

Art Smith Cheddar Cheese Drop Biscuit
Original Recipe : Art Smith - Table 52

Ingredients :
2 cups all purpose flour
1 tsp salt
1/2 tsp baking soda
2 tsp baking powder
4 tbsp chilled unsalted butter
1/2 cup grated cheddar cheese
1 cup buttermilk

2 tbsp butter, melted
1/2 cup grated cheddar cheese for toping

Method : 
  • Preheat the oven to 425 degrees or 190'C. 
  • Mix all dry ingredients using a baloon whisk
  • Add the chilled butter, using pastry knife to blend the butter and the flour until it resembled bread crumbs
  • Add the 1/2 cup grated ceddar cheese, mix well.
  • Pour the buttermilk, mix using wooden spoon until just corporated. Do not over mix to avoid the flour becoming too gloutinous.
  • Meanwhile, preheated the cast iron or the pan into the oven for about 5 minutes. Remove from the oven, grease the pan with melted butter.
  • Spoon the dough onto the prepared pan. It just about 1 table spoon large of each biscuit.
  • Brush the top with the melted butter.
  • Bake for about 14-15 minutes until golden brown.
  • Removed from the oven, sprinkle with the grated cheese. 
  • Serve warm. 


Notes :
Gue yakin biscuit ini lebih enak kalo ditaburi keju cheddar sebelum dipanggang, dan ketika matang disajikan bersama parutan keju parmesan. :))
