Greentea Kasutera (Castella) - Japanese Honey Sponge Cake

Sponge cake tradisional dari Jepang ini sudah membuat saya penasaran dari dulu. Namun karena kesibukan di Rifa Cakes, saya baru sempat mencobanya tahun kemaren. Dan baru sempat saya upload tahun berikutnya. Hahahahaha...

Cake ini teksturnya unik. Penggunaan madu memunculkan aroma dan sensasi manis yang berbeda dari sponge cake biasa. Walaupun jenisnya Sponge Cake, tapi karena menggunakan tehnik hot wrapped, hasil akhirnya incredible moist dan lumer di mulut. Must try!

Greentea Kasutera (Castella) 

2 egg whites at room temperature

2 egg yolks at room temperature

5 tbsp (70g) sugar

1/3 cup (50g) bread flour, sifted

1 tbsp (25g) honey diluted with 1 tbsp hot water

2 egg yolks -- 2 kuning telur
2 egg whites  -- 2 putih telur
70 gr sugar -- 70 gr gula pasir
50 gr bread flour -- 50 gr terigu protein tinggi (cakra) 
1/2 tsp matcha powder - 1/2 sdt matcha bubuk, ayak bersama terigu 
25 gr honey diluted with 1 tbsp hot water -- 25 gr madu larutkan dengan 1 sdm air panas

Directions 

Line a loaf pan with parchment paper, set aside
Alasi loyang loaf dengan kertas roti menyeluruh kesemua sisi.

Whisk egg whites for 30 seconds until foamy, then gradually add sugar, whisk high speed until firm peaks forms, about 4 minutes.
Kocok putih telur selama 30 detik sampai berbusa, lalu masukkan gula pasir secara bertahap, kocok sampai kaku selama 4 menit.

Add egg yolks one of the time, whisk with low speed
Tambahan kuning telur satu per satu, kocok perlahan dengan speed terendah.

Add the sifted bread flour and matcha powder, mix until well combined
Tambahkan ayakan terigu dan bubuk matcha, aduk perlahan sampai menyatu

Add the honey mixture, mix well. Transfer to the prepared pan, and bake at 165 C for 45 minutes until tooth picks inserted come out clean.
Tambahan larutan madu, aduk rata. Lalu tuangkan ke dalam loyang. Panggang suhu 165 derajat celsius selama 45 menit sampai matang.

Tap the pan or drop it about one feet height to prevent the cake from shrinking. Then carefully remove the cake from the pan, wrap immediately with cling wrapped and put in the fridge for minimum 3 hours to overnight.
Setelah matang, jatuhkan loyang ke atas meja untuk mencegah cake menyusut. Lalu keluarkan cake dari loyang, bungkus segera dengan plastik wrapped, lalu masukkan kulkas selama minimal 3 jam. 

Keluarkan cake dari kulkas, kelupas kertas rotinya perlahan, lalu potong-potong menggunakan pisau tajam.
