This recipe is quite easy and fast. You can use any pie crust recipe you like. Even using biscuit crushed with melted butter for the crust will do better I suppose.
The recipe is mix from 2 of my favorite books. Delicious Dessert by Periplus and Easy Chocolate by Easy Baking.
Pie Crust :
- 200 grams all purpose flour sifted
- 100 gr salted butter / margarine / shorthening
- 50 gr caster sugar
- 1 egg, beaten
Mix all ingredients using food processor or just mix it by hand. Chilled the dough before rolled and pressed it onto the 20 cm pie pan. Baked 170'C for 20 minutes. Don't forget to put some beans onto the pie shell to prevent it rise while baking.
- 225 gr fine dark chocolate. I use 100 gr Lindt with 70% cacao and 125 gr of Tulip Coverture Chocolate.
- 150 ml fresh cream
- 150 ml milk
- 2 eggs beaten well with 3 tbsp of sugar
- Vanilla extract
I didnt add any sugar since I use non dairy cream that already sweetened.
Bring fresh cream and milk to boil. Remove from the heat the add the chopped chocolate. Stir until melted and incorporated. Then add the beaten eggs and vanilla extract. Pour onto the already baked pie shell, then return into the oven 160'C for 20 minutes.
Remember no to overbaked the filling. The center should be still soft and gooey. Cooled the tart before refrigerated for at least 3 hours before serving.
